A show-stopping roast chicken, beautifully balanced by the vibrant sweetness of Apricot Conserve against the balsamic's subtle tang.

Ingredients
- 1 large chicken

150g Tiptree Apricot
Jam
- 2tbsp balsamic vinegar
- 1tsp dried rosemary
- 1tbsp sesame seeds
- Salt, to season
Directions
Season the chicken liberally with salt. Loosely cover and refrigerate for at least one hour, preferably overnight.
When you’re ready to cook, preheat the oven to 200C/180C (fan)/gas mark 6 (although please check the timing on your chicken, they can differ according to weight.
Pop the chicken in the oven. 20 minutes before it is due to be removed, combine the Tiptree Apricot jam, balsamic vinegar, and dried rosemary in a saucepan and gently heat until spreadable but still thick. If you take it too far, just leave it to cool slightly.
10 minutes before the chicken is due to finish roasting, remove the tray from the oven and glaze with a thick coating of jam and balsamic mixture, retaining about 1/3 in the pan. Increase the temperature by 10C and cook for 5 minutes. Add the remaining glaze and sprinkle with sesame seeds before cooking for a further 5 minutes.
Remove the chicken from the oven and dig in as soon as it’s cool enough to handle.
