Lemon curd & fruit puff
Notes: be careful not to remove pastry from the refrigerator too soon before putting in the oven, as we found if it gets too soft the edges are not as defined making less likely to rise or rise erratically. For a more substantial dessert bake all the pastry on two trays and create extra layers with delicious fillings.
Summer fruits zabaglione
This recipe was created by chef Rachel Green and we have just updated the product used to create the most delicious light summer dessert; it can be enjoyed throughout the year, using fresh or frozen fruits. You just need a little time and patience when whisking. Serve warm or cold and recall the days when Italian waiters would create zabaglione at your table.

Festive trifle
These tall large “gin” glasses are fun to use when cooking for two or four people – you may need share. You can make most of the ingredients from scratch but we saved time and cheated – but allow time to cook and cool the Black forest berries! Homemade custard would probably be thicker
There is a choice of conserves for those who prefer a traditional taste and those who like Daiquiri.

baked bramley apples with mincemeat
One of our most useful English cooking apples is the Bramley Seedling and it can be used for a simply delicious dessert: filled with dates or ground almonds mixed with Apricot Conserve or Mincemeat.

Brandy Butter can be replaced with firmly whipped fresh double cream if preferred.
